Today we're taking a little trip to Piedmont without leaving your kitchen. We're making Risotto con Castelmagno.
Castelmagno: The Cheese with Attitude
This isn't just any cheese – Castelmagno D.O.P. is the Sophia Loren of cheeses! Born in the mountains of Piedmont, this blue beauty has been seducing taste buds since the Middle Ages. It's got character, it's got spunk, and it's about to make your risotto sing opera!

From our kitchen to yours
- 350g Carnaroli rice
- 250g Castelmagno D.O.P.
From your pantry:
- 1 small white onion
- 100g Hazelnut
- 60g butter
- 1 spoonful of honey
- Vegetable broth
- Half glass white wine
- Olive oil
Instructions:
Sautee the onions
Heat that olive oil like you're warming your heart! Sauté the onion until it's soft and golden – this is the soul of your risotto, treat it with respect!
Toast the rice
Add the Carnaroli and stir with amore for 2-3 minutes. Listen to it sizzle – that's the sound of happiness! Each grain should be coated like it's getting ready for a night out in Milano.
Add the wine
Pour in that white wine and watch it bubble with excitement! Stir until it's absorbed – the rice is drinking it up like a happy Italian at aperitivo time!
Add the stock
Add hot broth one ladle at a time, stirring with the rhythm of a Venetian gondolier. This takes 18-20 minutes – perfect time to practice your Italian hand gestures!
Let it rest
When the rice is creamy but still has bite (like a good Italian conversation!), remove from heat. Stir in butter, then that magnificent Castelmagno and honey. Watch the magic happen – it's like watching Michelangelo paint!
